Origin & Profile Description
This decaffeinated lot, known as “Primavera,” is sourced from the Central Highlands of Guatemala, primarily drawing beans from the Atitlán and Chimaltenango regions. The region’s volcanic soil and high-altitude terrain (Strictly Hard Bean or SHB)—with elevations often around 1,550 to 1,750 meters above sea level—are ideal for producing dense, high-quality beans with complex flavors.
The coffee is composed of traditional Guatemalan varietals, including Bourbon, Caturra, Catuaí, and Typica.
The process used to remove the caffeine is the Swiss Water Process (SWP). This is a 100% chemical-free method that utilizes only water, temperature, and time to remove 99.9% of the caffeine. The key benefit of the Swiss Water Process is that it eliminates the caffeine but not the original taste, ensuring the coffee’s origin characteristics are preserved.
